Mrs Olson LefseLefse (lef'-sa) is a traditional, potato-based, soft, flat, Scandinavian bread. It is made by combining potato, flour, shortening, milk, salt and water. The dough is rolled very thin and baked on a hot, dry griddle. It is a Scandinavian delight and very versatile. Spread it with butter and roll up for a quick snack. If you have a sweet tooth, sprinkle one with a little sugar and add a dash of cinnamon. Serve as a bread with meals, a coffee-time snack, or a roll-up with your favorite lunchmeats and cheeses. |
Danish Crumbly Blue CheeseGreen Island Blue is the consummate salad cheese, excellent crumbled atop a bed a leafy greens and drizzled with balsamic vinegar and extra virgin olive oil. This predominantly white cheese has a delicate network of blue-green veins. Green Island Blue develops a complex, earthy flavor during its 8-12 week maturation period. Its crumbly texture and more-mild-than-Roquefort flavor exemplifies why this Danish blue cheese has made such an indelible mark in the culinary world. Green Island Danish Crumbly Blue can be used as a special dessert cheese with fresh fruits like strawberries, pears, or peaches. It is also great in recipes that call for Crumbly Blue or Roquefort. |
Gjetost CheeseThis Norwegian cheese is made under the Ski Queen brand from a mixture of cow and goat's milk. It has a unique, sweet flavor due to the way in which it is processed. The milk is cooked until the sugars in it have caramelized, giving the cheese its distinctive brown color and sweet flavor. The milk is then curded and pressed. This distinctive Norwegian "brown cheese" (brunost) became popular as a skiers' snack and thus the label "Ski Queen". It is widely popular among Scandinavian-Americans, and children especially are drawn to its sweet flavor. |

Danish Ginger SnapsPepparkakor, the Swedish term for Ginger Snaps, is the oldest gingerbread biscuit bakery in Sweden, with a long tradition and history behind it. Enjoy the taste of customary Swedish ginger snaps, or share them with a friend! The business began in the '40s when two brothers from Nyaker got the idea to distribute the gingerbread biscuits that had been baked for generations in their home in Nyaker, a district which was already famous as the "Promised Land of gingerbread biscuits". The two brothers worked out a recipe for the gingerbread biscuits and began to bake, and in fact this recipe is still used today and is a very well preserved secret. |
Swedish Lingonberry JamMost Americans are not familiar with the lingonberry, which grows wild in Scandinavian forests and in Northern Canada, and flourishes in the summer during the midnight sun. They are small firm berries with a slightly sweet and sour flavor. Lingonberry Preserve is a traditional Scandinavian food with an exotic flavor. Hafi Lingonberry Preserve is made in Sweden and is a delicious alternative to tart jams and preserves, such as currant or raspberry. |
Matjes HerringThese matjes or soused herring, have been cooked in vinegar, then are canned in a flavorful marinade containing salt, sugar, wine, dill, mace, and onions. |

Fazer - Marianne Toffee Filled Mint CandiesFazer introduced his Marianne candy in 1949. This classic Finnish brand combines the Russian confectionery tradition with a French mint flavor. Instead of the usual chocolate, Fazer has filled these mints with rich toffee. Refreshing and satisfying at the same time, enjoy these delights for the first time or, for our Scandinavian customers, rediscover a cherished childhood treat. |

Peppered Mackerel in OilSunnmøre Pepper Mackerel is excellent as a sandwich or as a topping in a fresh salad. Mackerel is notoriously rich in Omega 3. In Norway, smoked mackerel or mackerel in tomato sauce is a traditional breakfast dish, although it's a delicious snack at any time of day. A can of pepper mackerel covers far more than the daily recommended amount of Omega-3. The oil is of the highest quality, which highlights the delicious, light-smoked flavor. |
