2 packages Morinaga Silken Tofu - Lite Firm 1 cup plus 2 Tbsp.
evaporated cane sugar 1 Tbsp.
cornstarch 2 Tbsp. soy or rice spread (non-hydrogenated margarine)
1/4 cup fresh lemon juice
1/4 tsp. lemon extract
1 Tbsp. pure vanilla extract
PREPARATION:
Place tofu in food processor and blend. Add evaporated cane sugar and cornstarch and blend. Add the soy margarine, lemon juice, lemon extract, and vanilla. Process until smooth.
Pour into a 2-quart bowl or prepared pie shell. Cover and refrigerate. Serve well chilled. (Chill several hours or overnight.)
SWEET GARLIC WASABI DRESSING
INGREDIENTS:
1 package Mori-Nu Silken Tofu – Soft
2 Tbsp. soy mayonnaise
2 small garlic cloves
1 Tbsp. agave nectar
1 Tbsp. onion powder
1 Tbsp. garlic powder
1/4 tsp. wasabi powder
1 tsp. Himalayan salt
PREPARATION:
Blend all ingredients in blender until smooth. Store in an airtight container in the fridge for up to 1 week.
STRAWBERRY BANANA SMOOTHIE
INGREDIENTS:
1 package Mori-Nu Silken Tofu – Soft, Lite Firm, Firm, or Organic
1 small ripe banana
1 10 oz. package frozen, sweetened strawberries, partially thawed, including liquid
1 tsp of sugar (optional)
PREPARATION:
In a blender or food processor, combine all ingredients. Whip until smooth. Serve chilled.
