Pre-heat oven to 400 degrees line a baking sheet with parchment paper.
One date at a time, gently open up being careful to keep it intact place a piece of Manchego inside. Close date and wrap with a piece of bacon, securing with toothpick. Repeat with remaining ingredients.
Place the stuffed dates on your prepared baking sheet and bake for 10 – 15 minutes, or till bacon is fully cooked and starting to crisp. Transfer to a paper towel-lined tray to drain and serve warm or at room temperature.
